Raw Vegan Coleslaw


I never liked coleslaw when I was younger and ate the Standard American diet. Since I’ve been experimenting with new recipes lately, I was eager to create a version of coleslaw that I would actually enjoy.  This is by far one of my favorite raw vegan dishes I’ve made.  


  • 2 Granny Smith apples

  • 2 Pink Lady apples

  • 4 celery stalks

  • 2-3 carrots

  • Red onion

  • Red cabbage (about 1/4 of a head)

  • Pine nuts

  • Raisins (optional)

  • Radish sticks (optional)

Tahini Dressing

  • 1 cup Tahini (I like Ziyad brand)

  • 1 cup water

  • Juice of 1 lemon

  • 5 garlic cloves (use less if you don’t like it)

  • 1/4 TSP black pepper

  • 1/4 TSP sea salt



  1. Chop or cut the apples and add to a large bowl (I cut mine into matchstick shapes)

  2. Dice your celery and add to the bowl

  3. Julienne or shred the carrots and add to the bowl

  4. Cut as much red cabbage into strips (add as much as you would like) and add to the bowl

  5. Chop red onion and add to the bowl (add as much or as little as you want)

  6. Add pine nuts

  7. Optional: Add raisins and radish matchsticks


Sauce Directions:

  1. Add all sauce ingredients to a food processor or blender. Blend until smooth

  2. Store in a glass jar.

  3. Pour a little of the tahini sauce in the coleslaw and stir

We serve this over a bed of kale and add extra tahini sauce on top.  Eat as a side dish or as the main course.
