Vegan Gluten-free Red Beans and Sausage


This meal is so hearty, flavorful and packed with protein! Also very simple to make.  Here is my take on a classic southern dish. 

Here are the ingredients you will need:

  • 1 bag of red beans 
  • 2 cartons of vegetable stock
  • 4 celery stalks
  • 2 yellow onions
  • 2 green peppers 
  • 1 orange pepper 
  • 2 packages of Hot Italian Beyond Sausage
  • Olive oil
  • Slap Yo Mama Cajun seasoning
  • Paprika
  • Garlic powder 
  • Cayenne pepper
  • rice (optional)


  1. Rinse and sort your red beans. Then put in your crock pot with the 2 cartons of vegetable stock. Slow cook for 2 hours 
  2. When the beans are almost finished, chop all your veggies
  3. Sauté with a little bit of olive oil
  4. Add a little olive oil to a separate pan and cook the 8 beyond sausages,turning frequently, until they have browned. (I find it easier to cook them whole then cut them later.
  5. While you are sautéing your veggies and cooking the sausage, season your veggies with a little Slap Yo Mama, and paprika.
  6. Once the sausage has browned, remove from heat and cut into bite sized pieces.
  7. When all the seasoned veggies are tender, add them, the cut up sausage, and garlic powder to the beans.
  8. Add more Slap Yo Mama and garlic powder to taste. 
  9. Serve over rice if you want.

This is an affordable make ahead meal if you like to meal prep. For a more budget friendly option, omit one package of the Beyond Sausage. Or you can simply make red beans and rice following all these steps, and omit the sausage all together.  You can make this for yourself and freeze half of it, or if you have a large family this is a great meal to serve.
