Mashed Plantains

If you have really ripe plantains and don’t know what to do with them, then this sweet recipe is just what you need. One day I baked some plantains (recipe coming soon) and I had some really ripe ones that were too mushy to bake. Since I didn’t want them to go bad, I decided to create this recipe.


The mixture of plantains, coconut, and pineapple is so delicious, it will have you wishing you were on a tropical island.

Ingredients:

  • 5-7 really ripe plantains
  • 1 can unsweetened coconut milk
  • Cinnamon
  • Sea salt
  • 8 Medjool dates
  • Ginger
  • 1 can diced pineapple (optional)
  • Unsweetened shredded coconut
  • Walnuts
  • Pecans

Directions:

  1. Peel and chop the plantains
  2. Put in large pot, cover with water
  3. Boil plantains until soft
  4.   While plantains are boiling, put can of coconut milk, 1 tsp cinnamon, 8 dates, 1 tsp sea salt and ¼ tsp ginger into food processor
  5. Blend until smooth
  6. Drain, rinse, and mash plantains 
  7.   Pour coconut mixture into a large bowl and mix well until fully incorporated
  8. Add shredded coconut
  9. Drain a can of diced pineapples, pour into mashed plantains. (In the featured photo I didn’t have pineapples in the recipe. I added them later and it made this dish taste so much better)
  10. Top with pecans and walnuts and sprinkle with cinnamon
  11. Enjoy!
