Black Beans and Hash Browns


For the past two weeks this has been my favorite breakfast.  We eat this almost everyday.  It’s very filling and the good thing about this dish, is that you can add different toppings everyday to switch things up.  I’m going to share with you the recipe for the very first day I made this dish.  Without further ado, here are the ingredients you will need:

  • Black beans
  • package of shredded hash browns
  • olive oil
  • salt  (to taste)
  • pepper (to taste)
  • Smoked paprika (to taste)
  • Cumin (to taste)
  • garlic powder
  • cajun seasoning

Optional toppings:

  • chopped tomato
  • chopped green onion
  • salsa verde
  • guacamole



  1. I used a 16 oz bag of black beans which I soaked overnight then cooked until they were soft.  (If you cook them like this you can do the same thing)
  2. If using canned beans rinse, then heat up on the stove and season with  the aforementioned seasoning
  3. Cook hash browns according to package directions
  4. Put spoonful of hashbrowns in a bowl, the place spoonful of beans on top
  5. Top with chopped tomatoes, chopped green onions, quacamole, and salsa verde
